It is the norm to  chose your own table. The head waiter will usually inquire as to how many and smoking or non-smoking, then direct you to your table. Or, they may just ask you , for how many, and tell you "anywhere your chose".
In the cafes, it is the norm, if the sitting areas fill up. A stranger may ask to sit at your table. Do not say No, you would rather be alone. They are not trying to pick you up. They just want to sit.
If you do not speak French , and someone comes over to your table and says something in French. They are usually asking you if the empty seat is available? Just say, Wee, and smile and nod.
Tips are not the norm. But are appreciated! Sometimes on the menus you will see it is already included.
